The smaller wild berry with its thick skin full of phenolic compounds (or as we like to say, ‘yumminess’) is packed with concentrated flavour. The larger the skin-to-juice ratio, the more colour and flavour the wine has, meaning bold, smooth taste. Small berries make great wine.
